You can choose between two options for both the second appetizer and the main course.
Appetizer 1: Corn-breaded scampi with green tomato, yuzu avocado, and cilantro.
Appetizer 2 (Choose one):
Beef tartar with currant soy, green pepper aioli, and marinated kohlrabi.
Roasted whitefish with pea salad in crayfish oil, egg yolk, and umami soy.
Main Course (Choose one):
Roasted trout with cauliflower puree, chanterelles, lemon thyme sauce, and pickled summer onion.
Coeur de filet with lovage butter, endive, potato puree, and marinated apple
Dessert
Raspberry with pistachio ice cream, licorice, and fermented rhubarb
